Sweet & Spicy PBJ

A recipe from Georgia Department of Education School Nutrition

Creamy peanut butter and sweet-tangy marmalade, with toasted bread to bring crunchiness, fresh cilantro for a citrusy taste, and Sriracha to add heat. It is delicious!

Ingredients:

  • 192 slice Bread, pullman, WG
  • As needed Pan spray, butter flavored
  • 2 - #10 can Peanut Butter, creamy
  • 1 gal Marmalade, orange
  • 3 1/2 cup Sriracha
  • 8 oz Cilantro, fresh, leaves, chopped

Steps:

  1. Preheat combi oven to 375°F and 100% humidity.
  2. Spray 4 sheet pans with butter flavored pan release spray.
  3. Place 24 slices of bread on each sheet pan, 4 down and 6 across.
  4. Spray the bread, generously, with buttered flavored pan spray.
  5. Bake in preheated combi oven for 7 minutes, or until bread is golden brown.
  6. Set aside until assembly.
  7. Use a #30 scoop to portion 2 tablespoons peanut butter on each slice of bread.
  8. Spread the peanut butter over each slice.
  9. Use a #24 scoop to portion 2 1/2 tablespoons orange marmalade on one slice of peanut butter bread.
  10. Drizzle 2 teaspoons Sriracha sauce over marmalade and sprinkle with fresh, chopped cilantro.
  11. Top with second slice of peanut butter bread.
  12. Cut the sandwich in half diagonally or cut sandwich into four squares for service.
  13. Another great serving option is open-faced. See picture for reference.

    Hold at 41°F or below.

    It is important to hold this sandwich covered to ensure bread does not dry out.

    Batch cook through out service. Discard sandwiches after 30 minutes.
