Seasoned Tomato Slices
A recipe from Georgia Department of Education School Nutrition
Adding just a touch of garlic enhances the tomato flavor and makes a great addition to any sandwich or salad.
Ingredients:
- 3 lbs + 12 oz Tomatoes, fresh, medium
- 2 tbsp Garlic, granulated
Steps:
- Using a chef's knife and clean cutting board, slice tomatoes into 1/4" thick slices.
- Cut the tomato slices in half.
- Lay out onto sheet pan and sprinkle tomato slices with the granulated garlic.
- Transfer tomatoes to an appropriate service pan, cover and place in cold holding and/or into cold well on serving line.
- For service, portion 3 half slices.
Cut several tomato slices in half at once by first stacking the slices.
No bare hand contact with ready to eat food.
Hold at 41°F or below.
