Honey Mustard Turkey Wrap
A recipe from Georgia Department of Education School Nutrition
This wrap is simple yet really special. The Honey Mustard Spread adds flavor, folding the turkey creates volume, and the diagonal cut is interesting and beautiful.
Ingredients:
- 50 each Flour Tortilla, 10", WG
- 1 1/2 pt Honey Mustard Spread
- 12 1/2 cup Lettuce, romaine, shredded
- 50 slice Tomato, fresh, 5x5, sliced
- 4 lbs + 11 oz Turkey, all natural, oven roasted, deli sliced
- 100 each Cheese, American, slices
Steps:
- Lay out tortillas and smear 1 tablespoon of the Honey Mustard Spread 1/4 inch from the edge.
- Next, place 1/4 cup shredded romaine in the center of the tortilla.
- Cut tomato slices in half and add 2 halves on top of the romaine.
- Fold turkey slices in half to create volume and the place 1 1/2 ounces on top of tomatoes.
- Lastly, add two slices of American cheese on the turkey.
- Tightly roll the tortilla around all of the ingredients leaving ends open.
- Slice wraps diagonally for best presentation.
No bare hand contact with ready to eat food.
The spread does not cover the entire tortilla. Having it at the edges will secure the wrap when folded.
Cut several tomato slices in half at once by first stacking the slices.
Hold at 41°F or below.

Tips:
Heat up the tortillas in the hot box to make them more pliable and help prevent cracking/splitting when rolling.
