Ham & Pickle Roll Up Fuel Pack

Ingredients:

HAM & PICKLE ROLL UP

  • 50 each Flour Tortilla, 10", WG
  • 1 1/2 pt Honey Mustard Spread
  • 6 lbs + 4 oz Ham, all natural, deli sliced, low sodium
  • 75 each Pickles, spears, dill, low sodium
  • 50 each Peanuts, whole, IW, 1 ounce
  • 3 lbs + 2 oz Pretzels, whole grain, hard, mini

Steps:

    No bare hand contact with ready to eat food.

  1. Lay out tortillas and smear 1 tablespoon of the Honey Mustard Spread 1/4 inch from the edge.
  2. The spread does not cover the entire tortilla. Having it at the edges will secure the wrap when folded.

  3. Lay two-ounces sliced ham on each tortilla, leaving some of the honey mustard spread exposed for securing the wrap.
  4. Place 1½ pickle spear in the center of each tortilla.
  5. Using 1½ pickle spears per wrap ensures every bite includes pickle.

  6. Tightly roll the tortilla around all of the ingredients leaving ends open.
  7. Slice wraps diagonally into four pieces.
  8. Cold hold, wrapped, for assembly.
  9. Hold at 41°F or below.

TO SERVE:

  1. Portion 2 pieces of the Ham & Pickle roll ups, 1 IW pack Peanuts & one-ounce mini Pretzels into paper lined boat or clear-hinged container for service.
  2. To portion pretzels, first weigh to determine the quantity required. Then an appropriate scoop may be used for portioning.

  3. Cold hold for service.
  4. Hold at 41°F or below.

  5. Each serving is - Ham & Pickle roll up, 1 IW pack Peanuts & one-ounce portion mini Pretzels.
  6. This entree holds well and does not need to be batched throughout service.

    If serving in paper lined boats, cover pans during cold holding to prevent the roll ups from drying out.
