Fresh Lettuce Leaves

A recipe from Georgia Department of Education School Nutrition

Fresh lettuce leaves add refreshing flavor and a nice crunch to burgers and crispy chicken sandwiches. Use locally sourced lettuce, when available, for grill topping bar!

Sliced onions, pickles, tomatoes, and lettuce for toppings.

Ingredients:

  • 2 lbs + 8 oz Lettuce, green, leaf, raw, untrimmed

Steps:

  1. Rinse lettuce under cool running water.
  2. No bare hand contact with ready to eat food.

  3. Cut ends off lettuce to create individual leaves for topping bar.
  4. Place lettuce leaves in 4-inch half hotel pans or 4-inch skinny pans for service.
  5. Cold hold, covered, until served.
  6. Hold at 41°F or below.
