Fresh Lettuce Leaves
A recipe from Georgia Department of Education School Nutrition
Fresh lettuce leaves add refreshing flavor and a nice crunch to burgers and crispy chicken sandwiches. Use locally sourced lettuce, when available, for grill topping bar!
Ingredients:
- 2 lbs + 8 oz Lettuce, green, leaf, raw, untrimmed
Steps:
- Rinse lettuce under cool running water.
- Cut ends off lettuce to create individual leaves for topping bar.
- Place lettuce leaves in 4-inch half hotel pans or 4-inch skinny pans for service.
- Cold hold, covered, until served.
No bare hand contact with ready to eat food.
Hold at 41°F or below.
