Tomato Slices

Students look for the ability to customize their entrees. Fresh tomato slices are a great topping option for burgers and chicken sandwiches.
Ingredients:
- 13 Tomatoes, medium, whole, red, ripe, raw
Steps:
- Remove sticker from tomato, if needed.
- Rinse the tomatoes under cool running water.
- Core and cut each tomato into 8 slices.
- Place tomato slices neatly in 2" skinny pans or 2" half hotel pans for service.
- Cold hold, covered, until served.
No bare hand contact with ready to eat food.
Hold at 41°F or below.
