Tomato Slices

Students look for the ability to customize their entrees. Fresh tomato slices are a great topping option for burgers and chicken sandwiches.

Sliced onions, pickles, tomatoes, and lettuce for toppings.

Ingredients:

  • 13 Tomatoes, medium, whole, red, ripe, raw

Steps:

  1. Remove sticker from tomato, if needed.
  2. Rinse the tomatoes under cool running water.
  3. No bare hand contact with ready to eat food.

  4. Core and cut each tomato into 8 slices.
  5. Place tomato slices neatly in 2" skinny pans or 2" half hotel pans for service.
  6. Cold hold, covered, until served.
  7. Hold at 41°F or below.
