The Gobbler

A recipe from Georgia Department of Education School Nutrition

This is a modern twist on the classic Thanksgiving meal. The Gobbler is also an excellent way to utilize remaining holiday meal ingredients.

The Gobbler

Ingredients:

  • 1 lbs + 13 oz Turkey, all-natural, oven roasted
  • 12 1/2 cup Stuffing, cornbread
  • 3 1/4 cup Cranberry Relish
  • 3 1/4 cup Gravy, turkey
  • 8 tbsp House Spice Blend
  • 25 oz Cheese, American, white, sliced
  • 50 each Bun, sandwich, whole grain
  • As needed Pan spray

Steps:

  1. Prepare the turkey, stuffing, and cranberry relish per district recipes.
  2. Hold at 135°F or above.

  3. Prepare the gravy per district recipe. Whisk in the House Spice Blend.
  4. Hold at 135°F or above.

  5. To assemble the sandwiches, place 1 slice cheese, 1/4 cup stuffing and 1 tablespoon spiced gravy on bun.
  6. Next, add 2.5 ounces sliced turkey and 1 tablespoon cranberry relish.
  7. Finish by spraying the top bun with pan spray to create a nice shine.
  8. Hold at 135°F or above.
