Spicy Steamed Cabbage
Recipe adapted from Heard County School Nutrition
This steamed cabbage from Heard County Schools is easy to make, features Ga Grown cabbage, and gives students that spicy zing they love.
Ingredients:
- 12 lbs + 8 oz Cabbage, green, raw, chopped
- 1/3 cup Jalapenos, pickled, chopped
- 1/4 cup Oil, vegetable
- 3 tbsp Base, vegetable
- 2 tbsp Spice, pepper, black, ground
- 2 tbsp Pepper, red, crushed, flakes
- 2 tbsp Spice, garlic, granulated
- 1 tbsp Salt, kosher
Steps:
- Place the cabbage in perforated steamtable pans.
- Steam cabbage 2-4 minutes.
- Remove from steamer. Place cabbage in 4-inch half hotel pans or 4-inch skinny pans for seasoning and service.
- Gently stir in oil, vegetable base, and chopped pickled jalapenos.
- Sprinkle the steamed cabbage with black pepper, crushed red pepper, granulated garlic, and salt. Gently stir to evenly distribute throughout.
- Hot hold, uncovered, until served.
- Serving is 1/2 cup.
Cook to 135°F or higher.
Hold at 135°F or above.
