Spiced Apple Muffin Parfait
A recipe from Georgia Department of Education School Nutrition
This truly delicious parfait features vanilla yogurt spiced with cinnamon, cardamom, and nutmeg, fresh apples, and apple-cinnamon muffins. It is an excellent way to highlight Georgia Grown apples at breakfast!
Ingredients:
- 50 each Muffin, WG, apple cinnamon, 1 oz. B/G
- 3 lbs + 4 oz Apples, variety, fresh, 125-138 count
- 1 gal Saltwater Bath
- 1 1/2 gal + 1 cup Yogurt, low-fat, vanilla
- 2 tbsp Spice, cinnamon, ground
- 1 tbsp Spice, cardamom, ground
- 1 tbsp Spice, nutmeg, ground
Steps:
This recipe transforms any leftover Apple Cinnamon Muffins into a unique and delicious breakfast parfait.
DAY PRIOR TO SERVICE:
- Wash apples under cool running water. Remove stickers, if needed.
- Cut apples into small dices and place in Saltwater Bath for at least 10 minutes or up to 30 minutes.
- While apples are soaking, prepare the yogurt. Using a large mixing bowl, whisk together the vanilla yogurt, cinnamon, cardamom, and nutmeg.
- Drain apples and in a clear cup portion 1/2 cup spiced yogurt, and 1/4 cup diced apples.
- Store, labeled, dated, and wrapped in the cooler.
No bare hand contact with ready to eat food.
Hold at 41°F or below.
DAY OF SERVICE:
- Top each parfait with 1 oz. apple cinnamon muffin, crumbled into medium pieces.
- Cold hold parfaits for service.
- Serving is 1 parfait.
