Roasted Berries
A recipe from Georgia Department of Education School Nutrition
Roasting fresh strawberries and blueberries intensifies their flavors and brightens their color, creating a jam-like berry sauce. A touch of honey adds a delicate sweetness.
Ingredients:
- 3 lbs Strawberries, fresh
- 2 lbs Blueberries, fresh
- as needed Pan spray, vegetable
- 1/4 cup Honey
Steps:
- Rinse strawberries and blueberries under cool running water.
- Hull the strawberries by removing the green tops. You can use a small paring knife or a strawberry huller. Cut larger strawberries in half.
- Lightly spray sheet pans with pan spray.
- Spread the berries in an even layer. Take care not to overcrowd the pan or your berries will not roast well.
- Drizzle the honey over the strawberries and blueberries.
- Roast berries in a 400°F oven for 20-25 minutes, until tender and their juices are released.
- Cool sheet pans of berries in the walk-in on the top shelves at the back of the cooler.
- Once the berries are safely cooled, transfer to the food processor. Pulse to break them down and create a jam-like consistency.
- Store wrapped, labeled, and dated in the cooler for use.
- Serving portion is 2 teaspoons. Use a #100 scoop for portioning.
Cook to 135°F or higher.
Cool food from 135°F to 70°F within 2 hours and then from 70°F to 41°F within 4 hours.
Scrape down the sides of the bowl as needed to ensure even mashing.
Hold at 41°F or below.
Make in bulk and freeze in measurements needed for production once properly cooled, wrapped, and dated. Completely thaw before use.
