Peach BBQ Glaze

This Peach BBQ glaze is a delicious combination of sweet peaches and BBQ sauce with a slight kick. Perfect on so many dishes; this is amazing on wings, shredded pork, and roasted chicken.

Peach BBQ Glaze

Ingredients:

  • 3 1/2 lbs Peaches, fresh, whole
  • 1/2 cup Sugar, brown
  • 3 tbsp Spice, pepper, red, crushed, flakes
  • 2 qt Sauce, BBQ
  • 1/4 cup Mustard, yellow, prepared
  • Pan spray, butter

Steps:

  1. Preheat oven to 400°F .
  2. Remove sticker, if needed, from peaches. Wash and cut, unpeeled, into slices.
  3. Using a large mixing bowl, combine peach slices, brown sugar, and crushed red pepper flakes. Stir to combine.
  4. Spread peaches in an even layer on sheet pans lined with parchment paper and sprayed with pan spray.
  5. Roast peaches for 15 minutes until the peaches are tender and caramelized.
  6. Remove the peaches from the oven and place pans in cooler to chill.
  7. Cool food from 135°F to 70°F within 2 hours and then from 70°F to 41°F within 4 hours.

  8. Once peaches have cooled, puree until smooth, using a food processor, VCM, or blender.
  9. Use a large mixing bowl to whisk together peach puree, BBQ sauce, and mustard.
  10. Cold hold, covered, until needed. Use within 7 days.
  11. Hold at 41°F or below.
