Oven Fried Tilapia
A recipe from Brooks County School Nutrition
Lite, flaky fish with a seasoned cornmeal breading, oven fried until crispy.
Ingredients:
- 1 lbs + 4 oz Flour, WG white, enriched
- 4 lbs + 2 2/3 oz Eggs, frozen, liquid
- 3/4 cup + 1 tbsp Mustard, prepared
- 1/3 cup + 1 tsp Garlic and herb seasoning
- 4 lbs + 2 2/3 oz Breading, fish
- 100 each Tilapia, filet, fresh frozen
- Oil spray, butter flavored
Steps:
- PREHEAT OVEN TO 425°F.
- Line a sheet pan with foil and spray with butter spray.
- Place the flour in a shallow container.
- Place the thawed eggs in another shallow container and mix with mustard.
- Mix the breading and garlic herbs in another shallow container.
- Dip the filet in the flour shaking off any excess, then the egg, and lastly into the seasoned breading mixture.
- Place on prepared pan. Spray with the butter bud spray.
- Bake for 10-15 minutes until the fish flakes easily with a fork.
- Place, uncovered, into hold holding cabinet and/or directly on the serving line.
- Serving is 1 Tilapia filet.
This is a 3-stage breading method.
Cook to 145°F or higher for 15 seconds.
Hold at 135°F or above.
Fish should be batch cooked to ensure quality and crispy breading.
