Mojo Marinade
A recipe from Georgia Department of Education School Nutrition
Mojo Marinade (or Mojo Criollo) is a Cuban citrusy, garlicky marinade that has a slightly sour flavor. Use with pork, chicken, beef, fish, and even veggies.
Ingredients:
- 1 1/2 cup Oil, olive
- 20 each Garlic, cloves, raw
- 3 bunches Cilantro, fresh
- 1 bunch Oregano, fresh
- 3 cup Juice, orange
- 2 cup Juice, lime
- 1/2 cup Juice, lemon
- 3/4 cup Onion, yellow, raw, small diced
- 5 each Oranges, fresh, zested
- 3 each Limes, fresh, zested
- 1 tbsp Spice, cumin, ground
- 1 tbsp Spice, pepper, black, ground
- 1/2 tbsp Salt, Kosher
Steps:
- Rinse the cilantro and oregano in cool, running water. Pull cilantro and oregano leaves, discard stems.
- Using a blender, immersion blender, or food processor, combine olive oil and garlic cloves. Blend until smooth.
- Add the cilantro and oregano leaves. Pulse the blender until herbs are chopped.
- Pour the garlic mixture into a large mixing bowl. Add orange juice, lime juice, lemon juice, diced onion, orange zest, lime zest, cumin, pepper, and salt.
- Mix to combine.
- Cold hold marinade, covered, labeled, and dated, until needed.
Add some of the orange juice to garlic mixture. This will help the herbs chop easily.
Hold at 41°F or below.
This recipe can be cold held for up to 7 days.
