Jalapeno Honey Cheese Kolaches
A recipe from Georgia Department of Education School Nutrition
These Kolaches feature a honey wheat yeast dough filled with a jalapeno infused honey cream cheese. Finished with a sprinkle of sumac for a tangy-citrus pop of flavor, they are both beautiful and delicious!
Ingredients:
- 75 each Kolache Dough
- 75 srv Jalapeno-Honey Cream Cheese
- 1/2 cup Spice, sumac, ground
Steps:
DAY PRIOR TO SERVICE:
- Make the jalapeno honey cream cheese filling.
DAY OF SERVICE:
- Place thawed kolache dough in proofer.
- Allow dough to rise 60-90 minutes until doubled in size.
- Remove the risen dough from proofer. Using the bottom of a ¼ cup dry measuring cup, press a deep indentation in the center of each dough.
- Using a #30 scoop, add the jalapeno honey cream cheese filling to the center of each dough.
- Bake at 325°F for 20-25 minutes.
- Remove kolaches from oven and sprinkle with sumac. Hold in warming cabinets until service.
If the indentation is too shallow, the fillings will spill out as they bake.
If the cup is sticking, lightly spray the bottom of the cup with cooking spray.
Cook to 135°F or higher.
The center kolaches will take longer to bake. Test the center of kolaches to ensure well-done before removing from the oven.
Kolaches can be held through out service.
