Fresh Watermelon Cubes

Fresh watermelon is sweet and juicy. Serve this fresh fruit side often when Georgia Grown watermelons are in season.
Ingredients:
- 33 lbs Watermelon, fresh
Steps:
- Remove sticker, if needed. Rinse melons in cool, running water.
- Cut 1/2-inch off both ends to create a flat surface. Stand watermelon upright on one flat end.
- Cut off the rind, following the shape of the watermelon.
- Slice the watermelon into ½-inch to 1-inch slices. Then cut each slice into cubes.
- Use a #8 scoop or a 4-ounce spoodle to portion out 1/2 cup of watermelon cubes into individual serving containers for easy service
- Serving is 1/2 cup.
Hold at 41°F or below.
