Fresh Orange Zested Blueberries

Fresh blueberries lightly tossed with fragrant orange zest for a bright, citrusy pop. This refreshing topping adds a burst of flavor and color—perfect for customizing oatmeal bowls or build your own parfaits at breakfast.
Ingredients:
- 2 lbs Blueberries, fresh, whole
- 1 each Oranges, fresh, 138 count, whole
Steps:
- Rinse the blueberries under, cool, running water.
- Place blueberries in a mixing bowl.
- Remove stickers, if needed, and rinse oranges under, cool, running water.
- Using a microplane, zest oranges, adding zest to the bowl of blueberries.
- Gently mix the orange zest and blueberries to combine.
- Place the orange zest blueberries in 2-inch or 4-inch skinny pans, or a 6-pan configuration, for use on topping bars.
- Cold hold, covered, for service.
To zest the oranges, use a microplane and carefully remove only the bright orange outer layer, avoiding the bitter white pith beneath.
Hold at 41°F or below.
