Everything Egg & Peanut Pack

Hard‑boiled egg with salt‑free everything bagel seasoning, plus IW peanuts and mini pretzels.
Ingredients:
- 50 each Everything Bagel Hardboiled Egg
- 50 each Peanuts, whole, IW, 1 ounce
- 6 lbs + 4 oz Pretzels, whole grain, hard, mini
Steps:
- Prepare the everything bagel hardboiled eggs following recipe.
- Cold hold, covered, until assembly.
Hold at 41°F or below.
TO SERVE:
- Portion 1 Everything Bagel HB Egg, 1 IW pack Peanuts & two-ounce portion mini Pretzels into paper lined boat or clear-hinged container for service.
- Cold hold for service.
- Each serving is - 1 Everything Bagel HB Egg, 1 IW pack Peanuts & two-ounce portion mini Pretzels.
To portion pretzels, first weigh to determine the quantity required. Then an appropriate scoop may be used for portioning.
Hold at 41°F or below.
This entree holds well and does not need to be batched throughout service.
If serving in paper lined boats, cover pans during cold holding to prevent the eggs from drying out.
