Creamy Cilantro-Lime Slaw

This Cilantro-Lime Slaw recipe is easy to make and tastes extra fresh and light. It serves as an excellent side dish or as a delicious topping for Street Tacos or BBQ Sandwiches.

Creamy Cilantro-Lime Slaw in 4-inch pans for service.

Ingredients:

Dressing

  • 2 cup Mayonnaise
  • 1 1/2 cup Lime juice
  • 1/2 cup Vinegar, apple cider
  • 2 tbsp Lime, zest
  • 1 tsp Pepper, black, ground
  • 1 tsp Salt, kosher
  • 1 tbsp Spice, garlic, granulated

Slaw

  • 5 lbs Coleslaw mix, fresh
  • 2 lbs Carrots, raw, shredded
  • 2 cup Onions, green, chopped
  • 2 cup Cilantro, fresh, leaves, chopped

Steps:

Dressing

  1. Whisk all dressing ingredients in a bowl until smooth.
  2. This dressing can be made ahead of service. Cold hold until needed.

    Hold at 41°F or below.

Slaw Assembly

  1. Combine the coleslaw mix, shredded carrots, green onions, cilantro, and dressing. Gently mix to fully incorporate.
  2. Place the slaw into 4-inch skinny pans or 4-inch half hotel pans for service. Use a #8 disher or 4 oz spoodle to serve.
  3. Cold hold, covered, until served.
  4. Hold at 41°F or below.
