Classic Chicken Salad Croissant

This classic chicken salad is the perfect combination of creamy chicken with bold mustard and zesty lemon. It is quick to prepare and ideal for making in advance. This chicken salad can also be served as a wrap, on an entree salad or with crackers as shown in the picture.

Classic chicken salad croissant

Ingredients:

  • 50 each Croissant, whole grain, 2oz., sliced
  • 50 srv Chicken Salad Base
  • 1 1/4 cup Mustard, dijon
  • 2 each Lemon, fresh, zested
  • 1/2 cup Juice, lemon
  • 1/2 cup Parsley, Italian, fresh, chopped

Steps:

DAY PRIOR TO SERVICE

  1. Transfer the croissants from the freezer to dry storage a day before they are needed to ensure they thaw completely.

DAY OF SERVICE

  1. Using a large mixing bowl, gently combine the Dijon mustard, lemon zest and juice, and chopped parsley into the prepared, cold chicken salad base.
  2. Cold hold the Chicken Salad, covered and labeled, until served.
  3. Hold at 41°F or below.

    Chicken Salad flavor develops best if made the day prior to be served.

  4. Portion 1/2 cup chicken salad into each croissant.
