Chili Tots

Recipe adapted from Dawson County School Nutrition

Zesty Beef chili finished with crispy potato tots and a sprinkle of cheddar cheese.

Ingredients:

Steps:

  1. Prepare the chili according to the recipe. Or reheat if made ahead of time.
  2. Cook to 165°F or higher for 15 seconds.

  3. Place chili into a 4-inch 1/2 hotel pan and hot hold for service.
  4. Hold at 135°F or above.

  5. Pre-heat oven to 425°F. Spray a sheet pan with pan spray and lay out the tots in a single layer. Lightly spray tots with veg oil., then bake 10-12 minutes.
  6. Cook for 10-12 minutes, rotating the pan halfway through. Tots should be golden and crispy.
  7. Tots need to be cooked in batches to maintain quality and crispness.

    Cook to 135°F or higher.

  8. Once tots are done, sprinkle with the house blend seasoning, then place into a hotel pan and hot hold (uncovered) for service.
  9. Hold at 135°F or above.

  10. Gather the prepped diced tomatoes, chopped parsley, and shredded cheese and hold covered in the cold holding cabinet until ready for service.
  11. Hold at 41°F or below.

  12. For service: In a heat proof bowl, scoop 1/2 cup (4 oz.) of the chili, top with 5 tots. Sprinkle 1 teaspoon each of shredded cheese, diced tomato chopped parsley.
  13. Serve with a 2 oz. equivalent whole grain.
