A recipe from Georgia Department of Education School Nutrition

This classic holiday recipe is great with a variety of veggies.

Cheesy Green Bean Casserole in bowls.

Ingredients:

  • 12 lbs Beans, green, frozen
  • 5 lbs Cheese sauce, white
  • 3 lbs Cheese, mozzarella, shredded
  • 2 tbsp Spice, onion, ground
  • 2 tbsp Spice, garlic, granulated
  • 1 tbsp Pepper, black, ground
  • 12 oz Onions, crispy, fried

Steps:

  1. Using a large mixing bowl and rubber spatula, combine the white cheese sauce, shredded mozzarella, onion, garlic, and pepper.
  2. Gently stir in the frozen green beans.
  3. Evenly spread the green bean and cheese mixture into 2-inch pans.
  4. This is a great make ahead recipe. These pans can be wrapped, labeled, and dated. Freeze until needed and thaw in the cooler one to two days prior to production.

  5. Just before baking, sprinkle each pan with crispy fried onions. Cover the pans with foil and bake at 350°F for 35-45 minutes.
  6. Cook to 135°F or higher.

  7. Remove the foil and bake an additional 10 minutes. This step ensures the onions are golden and crispy.
  8. Hold at 135°F or above.

  9. Serving is 1/2 cup.
