Cheesy Bombay Breakfast Bake

Taste the complex flavors of rich roasted tomato blended with Indian inspired spices with a bit of heat. The sauce soaks into the bread as it bakes and really brings out the flavors. Then it is finished with fresh mint and cilantro.

Ingredients:

  • 2 qt Bombay Tomato Sauce
  • 5 lbs Bread, enriched whole grain
  • 3 tbsp Spice, garlic, granulated
  • 2 1/2 lbs Cheese, mozzarella, shredded
  • 2 cup Cilantro, fresh, chopped
  • 1 cup Cilantro, fresh, chopped
  • Pan spray

Steps:

  1. Cut bread into medium cubes. Sliced bread, sub rolls, and dinner rolls all work well in this recipe.
  2. Avoid dense breads, like biscuits.

  3. Spread bread cubes in an even layer on sprayed sheet pans.
  4. Sprinkle with granulated garlic and toast in the oven at 350°F for 5 minutes.
  5. Using 2" pans, sprayed with pan spray, spread half the bread evenly on the bottom.
  6. Spoon over the Bombay Tomato Sauce. Then sprinkle over remaining bread cubes.
  7. Bake at 350°F for 15-18 minutes. Remove from the oven and sprinkle with shredded mozzarella.
  8. Bake for an additional 5 minutes.
  9. Cook to 135°F or higher.

  10. Sprinkle with chopped cilantro and mint.
  11. Hold at 135°F or above.

  12. Serving is 3/4 cup.
