Beef and Cheese Taco

A recipe from Georgia Department of Education School Nutrition

A classic taco made with seasoned ground beef, shredded cheddar cheese, diced tomato, and shredded lettuce. Served in a warm-soft tortilla, folded uniquely to make eating and adding additional toppings an ease for students.

Beef and cheese taco

Ingredients:

  • 100 each Tortilla, whole wheat, 10-inch
  • 12 lbs + 8 oz Taco Seasoned Ground Beef
  • 6 lbs + 4 oz Cheese, cheddar, shredded
  • 3 lbs + 2 oz Lettuce, romaine, fresh, shredded
  • 5 lbs + 12 oz Tomatoes, fresh, diced

Steps:

  1. Place tortillas, bagged, in hot holding cabinet to warm.
  2. Prepare the Taco Seasoned Ground Beef according to recipe. Hot hold, covered, until assembly.
  3. Hold at 135°F or above.

  4. To assemble, fold tortilla in half, creating a half circle. Fold the tortilla in half again, creating a triangle shape. This creates a pocket for the taco fillings.
  5. Add 1/2-ounce shredded cheese, 2-ounces taco seasoned ground beef. Top with 1/2-ounce shredded cheese.
  6. Place in deli paper lined boats or shingled in 2-inch full hotel pans for service.
  7. Hot hold, covered, for service.
  8. Hold at 135°F or above.

  9. Just before place on the serving line, add 1/8 cup shredded lettuce and 1/8 cup diced tomato.
  10. Serving is 1 taco. Include additional toppings on serving lines for students to customize.
