All-American Sub
A recipe from Georgia Department of Education School Nutrition
The All-American Sub combines ham, turkey, dressed lettuce, and tomatoes on a hoagie roll. Simple ingredients, thoughtfully layered, create a flavorful, student-approved sandwich!
Ingredients:
- 100 each Bread, hoagie bun, frozen, 2 oz. eq
- 9 lbs + 6 oz Ham, all natural, smoked, deli sliced
- 9 lbs + 6 oz Turkey, all natural, oven roasted, deli sliced
- 50 slice Cheese, American, yellow
- 50 slice Cheese, American, white
- 25 cup Dressed Shredded Lettuce
- 200 slice Seasoned Tomato Slices
Steps:
- Cut yellow and white cheese in half diagonally.
- To assemble, split each hoagie bun lengthwise.
- Place 4 half slices of cheese, alternating the yellow and white American to create a nice contrast in color.
- Fold ham slices in half to create volume and the place 1.5 ounces on top of cheese.
- Fold turkey slices in half to create volume and then place 1.5 ounces on top of turkey.
- Lastly, add ¼ cup dressed shredded lettuce and 3 half slices seasoned tomato.
- Serving is 1 Sandwich
Pull hoagie buns from the freezer to dry storage, the day before service.
No bare hand contact with ready to eat food.
Add the cheese so the point of the diagonal is pointing out of the bread.
Hold at 41°F or below.
