Classic Grilled Cheese

The classic grilled cheese sandwich remains a delicious and comforting choice. It is a timeless dish that still stands as a favorite for student lunches.
Ingredients:
- 96 sprays Pan spray, butter flavored
- 192 slice Bread, pullman, WG
- 12 lbs Cheese, American, sliced
Steps:
- Preheat combi oven to 375°F and 100% humidity.
- Spray sheet pans with butter flavored pan spray. Lay 24 slices of bread on each sheet pan.
- Place 2-ounces (4 slices) of cheese on each slice. Top with a second slice of bread.
- Spray tops of sandwiches with buttered flavored pan spray.
- Bake in preheated combi oven for 7 minutes, or until cheese is melted and bread is golden brown.
- Serve immediately, or cover pan with plastic wrap until ready for service. Cut holes in plastic wrap to allow steam to escape to prevent bread from getting soggy. Place the pan in warmer until ready for service.
Bread fits well 4 slices by 6 slices on each sheet pan.
This cooking method gives perfect grilled cheese sandwiches!
Cook to 135°F or higher.
Hold at 135°F or above.
Sandwiches must be batch cooked for quality. Discard any sandwiches not served after 30 minutes.
