  1. Prepare the everything bagel hardboiled eggs following recipe.
  2. Cold hold, covered, until assembly.
  3. Hold at 41°F or below.

TO SERVE:

  1. Portion 1 Everything Bagel HB Egg, 1 IW pack Peanuts & two-ounce portion mini Pretzels into paper lined boat or clear-hinged container for service.
  2. To portion pretzels, first weigh to determine the quantity required. Then an appropriate scoop may be used for portioning.

  3. Cold hold for service.
  4. Hold at 41°F or below.

  5. Each serving is - 1 Everything Bagel HB Egg, 1 IW pack Peanuts & two-ounce portion mini Pretzels.
  6. This entree holds well and does not need to be batched throughout service.

    If serving in paper lined boats, cover pans during cold holding to prevent the eggs from drying out.
