Tzatziki Sauce
Recipe adapted from Cherokee County School Nutrition
Tzatziki is a creamy and delicious Greek sauce. It is great on wraps, sandwiches, fish, chicken, salads, and fresh veggies.
Ingredients:
- 3 lbs Cucumber, English, raw
- 2 qt Yogurt, Greek, plain
- 1/2 cup Juice, lemon
- 1/4 cup Olive, oil
- 1/4 cup Garlic, raw, minced
- 1 tbsp Salt, Kosher
Steps:
DAY PRIOR TO SERVICE:
- Wash cucumbers under cold running water.
- Using the RoboCoupe, fitted with grating blade, shred cucumbers.
- Once cucumbers are shredded, squeeze and strain water from cucumbers (there will be a lot of water).
- Using a mixing bowl, whisk the yogurt, lemon juice, olive oil, garlic, and salt to combine.
- Stir in the shredded cucumber.
- Store in the cooler, wrapped, labeled, and dated.
- Serving is 3 tablespoons. Use #20 scoop for portioning.
This sauce is prepared the day before service to allow the flavors time to fully develop.
No bare hand contact with ready to eat food.
This step is crucial to ensure the sauce is creamy and full of flavor.
Hold at 41°F or below.
