Honey Mint Citrus Watermelon

This refreshing recipe combines juicy watermelon cubes with a drizzle of sweet honey, a hint of zesty citrus, and a sprinkle of fresh mint leaves.
Ingredients:
- 33 lbs Watermelon, fresh
- 1 qt + 2 1/4 cup Honey Mint Citrus Dressing
Steps:
- Prepare the Honey Mont Citrus Dressing per recipe instructions. Cold hold, covered, until needed.
- Remove sticker, if needed. Rinse melons in cool, running water.
- Cut 1/2-inch off both ends to create a flat surface. Stand watermelon upright on one flat end.
- Cut off the rind, following the shape of the watermelon.
- Slice the watermelon into ½-inch to 1-inch slices. Then cut each slice into cubes.
- Place watermelon cubes in a large mixing bowl and gently toss the fruits with the dressing and allow to marinate for at least 1 hour before serving.
- Use a #8 scoop or a 4-ounce spoodle to portion out 1/2 cup of watermelon cubes into individual serving containers for easy service
- Serving is 1/2 cup.
