Homemade Peanut Butter Granola

This easy-to-make recipe uses just oats, peanut butter, honey, and vanilla. The crunch and flavor make it a wholesome and delicious addition to many entrees

Homemade Peanut Butter Granola

Ingredients:

  • 4 lbs + 6 oz Oats, rolled
  • 2.5 cup Peanut Butter, creamy
  • 1 cup Honey
  • As needed Pan spray, vegetable
  • 2 tbsp Vanilla
  • 2 tsp Salt, Kosher

Steps:

  1. Measure peanut butter into a saucepan over low heat.
  2. Stir continuously until the peanut butter starts to melt.
  3. Melted peanut butter spreads more easily, ensuring that every bite of granola has a consistent flavor.

  4. Once the peanut butter starts to melt, take it off the heat and whisk in the honey and vanilla.
  5. Using a large mixing bowl, combine oats and peanut butter mixture. Stir until well combined.
  6. Spray two, parchment lined, sheet pans with pan spray and divide the granola between the two pans.
  7. Spread the mixture into an even layer.
  8. Bake at 275°F for 20 minutes.
  9. If the granola is darkening too quickly, lower oven temperature to 200°F.

  10. Remove from the oven and gently stir the granola. Continue baking an additional 10-15 minutes or until the granola becomes golden brown.
  11. Remove from the oven and cool before serving or portioning.
  12. The granola will become nice and crunchy as it cools.

  13. Serving is 1/4 cup.
  14. Prepare the granola in bulk and store in airtight containers, labeled, and dated in dry storage for use throughout the week.
