Hot Honey Chicken Philly

This Hot Honey Chicken Philly is a delicious twist on the classic Philly cheesesteak. Chicken, cheese, peppers, and onions with hot honey create a perfect sweet, spicy, and savory balance.

DAY PRIOR TO SERVICE:

  1. Prepare the Hot Honey Glaze according to the recipe.
  2. Place the frozen hoagie buns in the cooler to thaw overnight.

DAY OF SERVICE:

  1. Cook the Slow Roasted Onions and Peppers according to the recipe. Hot hold for service.
  2. Hold at 135°F or above.

  3. Place bagged hoagie buns in warming cabinets to warm and soften.
  4. Preheat convection oven to 400°F. Place frozen fajita strips in a single layer on sheet pans. Bake fajita strips for or 15 – 20 minutes for convection oven.
  5. Cook to 135°F or higher. Commercially processed, ready-to-eat food that will be hot held for service must reach a minimum internal temperature of 135°F or higher.

ASSEMBLY:

  1. Spray hoagie buns with pan spray. This creates a nice shine.
  2. Place open hoagie bun on tray, top with 3 ½ ounces chicken fajita meat, ¼ cup Slow Roasted Onions and Peppers, and 1 ounce cheese.
  3. Drizzle with 2 tablespoons of Hot Honey Glaze.
  4. Phillies should be batch assembled every 30-35 minutes throughout service to maintain flavor, juiciness, and texture.
