Spicy Bird Dog

Spicy chicken tenders inside soft hot dog buns, with shredded cheese, red onion, and an irresistible homemade chipotle ranch sauce. This is a great recipe that creates excitement at lunch.
Ingredients:
- 100 each Bread, buns, hotdog, WG, frozen
- 300 each Chicken, tender, spicy, breaded, precooked, ready to eat, frozen
- 3 lbs + 2 oz Cheese, mozzarella, shredded
- 3 lbs Onions, red, diced
- 6 1/4 cup Chipotle Ranch Sauce
Steps:
Day Prior To Service
- Pull buns from the freezer to dry storage.
- Spray sheet pans with pan spray and place frozen chicken tenders in a single layer.
- Return chicken tenders to freezer until day of service.
- Make the Chipotle Ranch Sauce. Store, covered, labeled, and dated, in cooler.
Hold at 41°F or below.
Day Of Service
- Place buns, bagged, in warmer to heat.
- Cook chicken tenders in oven at 350°F for 10-12 minutes.
Cook to 135°F or higher. Commercially processed, ready-to-eat food that will be hot held for service must reach a minimum internal temperature of 135°F or higher.
Chicken tenders should be batch cooked every 30-35 minutes throughout service to maintain flavor, juiciness, and texture.
Assembly and Service
- Spray the buns with pan spray. This creates a nice shine.
- Sprinkle 1 tablespoon shredded mozzarella in the bottom of each bun.
- Top with three spicy chicken tenders and 1/2 tablespoon diced red onions.
- Sprinkle 1 tablespoon shredded mozzarella over the red onions.
- Finish by drizzling 1 tablespoon Chipotle Ranch over each sandwich.
- Hot hold buffalo bird dogs, loosely covered, in proofer until served.
No bare hand contact with ready to eat food.
Cook to 135°F or higher.
