Cheesy Egg & Sausage Tot Bake

Recipe adapted from Heard County School Nutrition

This recipe from Heard County is simple to prepare and full of flavor! It features ingredients students love and is designed to be made ahead, making it ideal for breakfast service.

Cheesy egg & sausage tot bake breakfast bowls

Ingredients:

  • 10 lbs + 8 oz Potatoes, tater tots, frozen
  • 7 lbs Sausage, breakfast patty, chicken, turkey or pork, precooked, ready to eat, frozen
  • 4 lbs Vegetables, fajita blend, frozen
  • 14 lbs Eggs, liquid, bulk bag, frozen
  • 1 qt Milk, 2%
  • 3 tbsp Pepper, black, coarse ground
  • 3 tbsp Spice, garlic, granulated
  • 2 tbsp Spice, onion, powder
  • 4 lbs Cheese, cheddar, low fat, shredded
  • 3 lbs Cheese, mozzarella, low fat, shredded
  • 3 tbsp Pepper, red, crushed, flakes

Steps:

TWO DAYS PRIOR TO SERVICE:

  1. Place sausage patties, fajita veggies, and tater tots in the cooler to thaw.
  2. Hold at 41°F or below.

DAY PRIOR TO SERVICE:

  1. Place 1/4 cup tater tots in the bottom of baking cups, approximately 5 tots.
  2. Using the VCM roughly chop the sausage into bite size pieces. In a mixing bowl, combine sausage pieces and fajita veggie blend.
  3. Sprinkle 1/3 cup chopped sausage, and fajita veggies into the baking cups, #12 disher.
  4. In a large mixing bowl, whisk together the liquid eggs, milk, black pepper, granulated garlic, onion powder, and salt.
  5. Pour 1/3 cup of the egg mixture, #12 disher, over tots and sausage in each baking cup.
  6. Using a mixing bowl, combine cheddar and mozzarella cheeses.
  7. Sprinkle each baking cup with 1 oz. shredded cheeses.
  8. Bake at 325°F for approximately 18-21 minutes until golden.
  9. Cook to 155°F or higher for 15 seconds.

  10. Remove from the oven and place in the walk-in to cool.
  11. Cool food from 135°F to 70°F within 2 hours and then from 70°F to 41°F within 4 hours.

  12. Store in the cooler overnight, wrapped, labeled, and dated.
  13. Hold at 41°F or below.

DAY OF SERVICE:

  1. Heat the tot bakes by place them in the oven, unwrapped, at 275°F for 4-7 minutes. Just until they reach temperature.
  2. Cook to 165°F or higher for 15 seconds.

  3. Remove from oven and sprinkle with crushed red pepper for service.
  4. Serving is 1 Cheesy Sausage and Tot Bake.
