Chili Tots
Recipe adapted from Dawson County School Nutrition
Zesty Beef chili finished with crispy potato tots and a sprinkle of cheddar cheese.
Ingredients:
- 50 srv Beef Chili with Beans
- 4 lbs Potato Tots
- 2 tbsp House Spice Blend
- 1 cup Tomato, fresh, 1/8" diced
- 1 cup Parsley, fresh, chopped fine
- 1 cup Cheese, cheddar shredded
Steps:
- Prepare the chili according to the recipe. Or reheat if made ahead of time.
- Place chili into a 4-inch 1/2 hotel pan and hot hold for service.
- Pre-heat oven to 425°F. Spray a sheet pan with pan spray and lay out the tots in a single layer. Lightly spray tots with veg oil., then bake 10-12 minutes.
- Cook for 10-12 minutes, rotating the pan halfway through. Tots should be golden and crispy.
- Once tots are done, sprinkle with the house blend seasoning, then place into a hotel pan and hot hold (uncovered) for service.
- Gather the prepped diced tomatoes, chopped parsley, and shredded cheese and hold covered in the cold holding cabinet until ready for service.
- For service: In a heat proof bowl, scoop 1/2 cup (4 oz.) of the chili, top with 5 tots. Sprinkle 1 teaspoon each of shredded cheese, diced tomato chopped parsley.
- Serve with a 2 oz. equivalent whole grain.
Cook to 165°F or higher for 15 seconds.
Hold at 135°F or above.
Tots need to be cooked in batches to maintain quality and crispness.
