Cardamom Scented Roasted Pears
A recipe from Georgia Department of Education School Nutrition
Roasting is a simple technique that deepens flavor of pears and creates a juicy, and slightly caramelized result. The cardamom and pear flavor combination is especially delicious!
Ingredients:
- 7 lbs Pears, fresh, 100 count, whole, D’Anjou or, Bosc or, Bartlett
- as needed Pan Spray, vegetable
- 3 tbsp Sugar, granulated
- 2 1/2 tsp Spice, cardamom, ground
Steps:
- Remove stickers from pears, if needed. Then rinse in cool, running water.
- Core and medium dice pears with skin on.
- Line sheet pans with parchment paper and lightly spray with pan spray.
- Spread the diced pears in an even layer. Take care not to overcrowd the pan or your pears will not roast well.
- Sprinkle sugar over pears.
- Roast pears in a 400°F oven for 20-25 minutes, until tender and caramelized.
- Remove from oven and sprinkle with cardamom. Gently toss to combine.
- Hot hold, covered, for service.
- Place in 2-inch or 4-inch skinny pans, or a 6-pan configuration, for use on topping bars.
Cook to 135°F or higher.
Hold at 135°F or above.
