Spiced Pear Kolaches

A recipe from Georgia Department of Education School Nutrition

These Kolaches feature a honey wheat yeast dough filled with a simple, spiced pear filling that includes ginger, cinnamon, nutmeg, and allspice. Finished with a strudel crumb, they are both beautiful and delicious!

Pear Spiced Kolaches.

Ingredients:

DOUGH:

FILLING:

  • 2 #10 can Pears, canned, in light syrup, diced
  • 1 1/2 tbsp Vanilla extract
  • 2 cup Sugar, granulated
  • 1/4 cup Spice, ginger, ground
  • 2 tbsp Spice, cinnamon, ground
  • 1 tbsp Spice, nutmeg, ground
  • 2 tsp Spice, allspice, ground

TOPPING:

  • 4 1/2 cup Flour, all-purpose
  • 1 1/4 cup Butter, unsalted, softened
  • 1 1/4 cup Sugar, granulated

Steps:

STRUDEL TOPPING:

  1. Using the mixer with paddle attachment or the VCM, mix strudel ingredients just until blended.
  2. Cold hold, covered, until needed.
  3. Hold at 41°F or below.

DOUGH AND FILLING:

  1. Place thawed Kolache Dough in proofer.
  2. Allow dough to rise 60-90 minutes until doubled in size.
  3. While the Kolache Dough is rising, prepare the spiced pear filling.
  4. Drain the canned pears and place them in a large mixing bowl with the vanilla extract.
  5. In a separate bowl, whisk together the sugar, ginger, cinnamon, nutmeg, and allspice.
  6. Mixing the sugar and spices before adding them to the pears ensures the spices evenly mix with the pears rather than clumping.

  7. Sprinkle the sugar-spice mix over the diced pears and stir to combine.
  8. Remove the risen Kolache Dough from proofer. Using the bottom of a ¼ cup dry measuring cup, press a deep indentation in the center of each Kolache Dough.
  9. If the indentation is too shallow, the fillings will spill out as they bake.

    If the cup is sticking lightly spray the bottom of the cup with cooking spray.

  10. Using a #16 scoop, add spiced pear filling to the center of each Kolache Dough.
  11. Sprinkle 1 tablespoon strudel topping over each kolache.

BAKING:

  1. Bake at 325°F for 20-25 minutes.
  2. Cook to 135°F or higher.

    The center kolaches will take longer to bake. Test the center of kolache to ensure well-done before removing from the oven.

  3. Remove kolaches from oven and hold in warming cabinets until service.
  4. Kolaches can be held through out service.
