Hot Orange Chicken Street Tacos
A recipe from Georgia Department of Education School Nutrition
These street tacos feature orange glazed breaded chicken, homemade hot honey and topped with creamy cilantro-lime slaw. They are the perfect blend of sweet and spicy – absolutely delicious!
Ingredients:
- 600 each Chicken pieces, whole muscle breast, breaded, precooked, ready to eat, frozen
- 6 1/4 qt Orange Sauce, commercially prepared, low sodium
- 1 qt + 2 1/4 cup Hot Honey Glaze
- 12 1/2 cup Creamy Cilantro-Lime Slaw
- 6 1/4 cup Pickled Red Onion
- 200 each Tortilla, WG, 6-inch
Steps:
DAY PRIOR TO SERVICE:
- Prepare the Hot Honey Glaze recipe.
- Prepare the Pickled Red Onions.
- Make the Creamy Cilantro-Lime Slaw dressing.
DAY OF SERVICE:
- Spray perforated sheet pans with pan spray and place frozen breaded chicken pieces in a single layer.
- Cook chicken at 350°F for 11-13 minutes.
- Place chicken in a large mixing bowl and toss with Hot Honey Glaze to fully coat.
- To assemble, stack two tortillas on top of each other. See the picture for reference.
- Fill each tortilla with 6 orange glazed chicken pieces and drizzle 1 tablespoon Hot Honey Glaze over chicken. The add 2 tablespoons Creamy Cilantro-Lime Slaw and finish by adding 1 tablespoon Pickled Red Onions on top.
- Hot hold, loosely covered, for service.
- Street tacos should be batch assembled every 30-35 minutes throughout service to maintain flavor, quality, and texture.
- Serving is 1 street taco (two tortillas, stacked, filled with 6 orange chicken pieces, 1 tablespoon hot honey, 2 tablespoons creamy cilantro-lime slaw, and 1 tablespoon pickled red onion).
The perforations allow for greater air flow which results in crisper crusts on the breaded chicken.
Cook to 135°F or higher. Commercially processed, ready-to-eat food that will be hot held for service must reach a minimum internal temperature of 135°F or higher.
No bare hand contact with ready to eat food.
Hold at 135°F or above.
