Creamy Cilantro-Lime Slaw

This Cilantro-Lime Slaw recipe is easy to make and tastes extra fresh and light. It serves as an excellent side dish or as a delicious topping for Street Tacos or BBQ Sandwiches.
Ingredients:
Dressing
- 2 cup Mayonnaise
- 1 1/2 cup Lime juice
- 1/2 cup Vinegar, apple cider
- 2 tbsp Lime, zest
- 1 tsp Pepper, black, ground
- 1 tsp Salt, kosher
- 1 tbsp Spice, garlic, granulated
Slaw
- 5 lbs Coleslaw mix, fresh
- 2 lbs Carrots, raw, shredded
- 2 cup Onions, green, chopped
- 2 cup Cilantro, fresh, leaves, chopped
Steps:
Dressing
- Whisk all dressing ingredients in a bowl until smooth.
This dressing can be made ahead of service. Cold hold until needed.
Hold at 41°F or below.
Slaw Assembly
- Combine the coleslaw mix, shredded carrots, green onions, cilantro, and dressing. Gently mix to fully incorporate.
- Place the slaw into 4-inch skinny pans or 4-inch half hotel pans for service. Use a #8 disher or 4 oz spoodle to serve.
- Cold hold, covered, until served.
Hold at 41°F or below.
