Cheesy Bombay Breakfast Bake
A recipe from Georgia Department of Education School Nutrition
Taste the complex flavors of rich roasted tomato blended with Indian inspired spices with a bit of heat. The sauce soaks into the bread as it bakes and really brings out the flavors. Then it is finished with fresh mint and cilantro.
Ingredients:
- 2 qt Bombay Tomato Sauce
- 5 lbs Bread, enriched whole grain
- 3 tbsp Spice, garlic, granulated
- 2 1/2 lbs Cheese, mozzarella, shredded
- 2 cup Cilantro, fresh, chopped
- 1 cup Cilantro, fresh, chopped
- Pan spray
Steps:
- Cut bread into medium cubes. Sliced bread, sub rolls, and dinner rolls all work well in this recipe.
- Spread bread cubes in an even layer on sprayed sheet pans.
- Sprinkle with granulated garlic and toast in the oven at 350°F for 5 minutes.
- Using 2" pans, sprayed with pan spray, spread half the bread evenly on the bottom.
- Spoon over the Bombay Tomato Sauce. Then sprinkle over remaining bread cubes.
- Bake at 350°F for 15-18 minutes. Remove from the oven and sprinkle with shredded mozzarella.
- Bake for an additional 5 minutes.
- Sprinkle with chopped cilantro and mint.
- Serving is 3/4 cup.
Avoid dense breads, like biscuits.
Cook to 135°F or higher.
Hold at 135°F or above.
