Steamed English Peas
A recipe from Georgia Department of Education School Nutrition
Steamed peas are a classic veggie side, and delicious with only the addition of a little butter, sugar, salt and pepper.
Ingredients:
- 21 lbs Peas, green, frozen
- 10 oz Butter, unsalted
- 1/2 cup Sugar, granulated
- 2 tbsp Spice, pepper, black, ground
- 2 tbsp Salt, kosher
Steps:
- Place 5 pounds and 4 ounces of frozen peas in each 4-inch perforated hotel pan.
- Place pans in freezer until ready to steam.
- Place pan in steamer and steam 2-3 minutes. Just until they reach an internal temperature of 135°F
- Remove peas from steamer and transfer to solid pan for seasoning.
- Add 1/4 cup butter, 2 tablespoons sugar, 1/2 tablespoon black pepper, and 1/2 tablespoon salt to each pan.
- Gently stir to combine.
- Place steamed peas in 4-inch half hotel pans or portion 1/2 cup servings.
- Serve immediately.
Batch cook peas as needed throughout service. Steaming only takes 2-3 minutes. Cooking too far in advance or holding too long will result in peas that are mushy and gray.
Cook to 135°F or higher.
Hold at 135°F or above.
Batch cook throughout service to maintain quality.

Tips:
