Peach BBQ Glaze

This Peach BBQ glaze is a delicious combination of sweet peaches and BBQ sauce with a slight kick. Perfect on so many dishes; this is amazing on wings, shredded pork, and roasted chicken.
Ingredients:
- 3 1/2 lbs Peaches, fresh, whole
- 1/2 cup Sugar, brown
- 3 tbsp Spice, pepper, red, crushed, flakes
- 2 qt Sauce, BBQ
- 1/4 cup Mustard, yellow, prepared
- Pan spray, butter
Steps:
- Preheat oven to 400°F .
- Remove sticker, if needed, from peaches. Wash and cut, unpeeled, into slices.
- Using a large mixing bowl, combine peach slices, brown sugar, and crushed red pepper flakes. Stir to combine.
- Spread peaches in an even layer on sheet pans lined with parchment paper and sprayed with pan spray.
- Roast peaches for 15 minutes until the peaches are tender and caramelized.
- Remove the peaches from the oven and place pans in cooler to chill.
- Once peaches have cooled, puree until smooth, using a food processor, VCM, or blender.
- Use a large mixing bowl to whisk together peach puree, BBQ sauce, and mustard.
- Cold hold, covered, until needed. Use within 7 days.
Cool food from 135°F to 70°F within 2 hours and then from 70°F to 41°F within 4 hours.
Hold at 41°F or below.
